Raw Pie – Red, White & Guilt-free!
This raw pie piled high with berries is a perfect way to celebrate our American Independence Day in a healthy way! Actually this raw dessert is perfect for any occasion not just our 4th of July!
Although I posted this recipe a year ago, it’s definitely worth re-posting and celebrating again for today!
If you love the taste and texture of cheese cake you will love this alternative pie. Plus it’s a much healthier dessert for you. Go ahead and wow your friends. Blend up my gluten-free, dairy-free and guilt-free raw frozen berry pie!
Raw Berry Pie
Red, White & Guilt-free
Crust
– 2 cups raw almonds
– ½ cups pitted mendjool dates
– 1 tsp. lemon zest
Mix in a food processor.
Do not over mix the almonds or they will turn into nut butter.
Press into a spring-form pan and chill.
Filling
– 3 cups raw cashews soaked 1 hour
– ¾ cups fresh lemon juice
– 1/2 – ¾ cups agave nectar
– ¾ cups organic raw coconut oil
– 1 tsp vanilla
Blend mixture in high-speed blender until smooth and pour over frozen crust. Place back into the freezer until ready to serve. Right before you serve, pile high with berries of your choice!
Like most raw pies, this one freezes really well and is best served chilled.
